As a general rule, it is enough to rub the whole surface by hand with fat (butter) or oil and salt. Optionally, before this operation, any stuffing can be introduced before roasting, such as chopped onion, peppers, etc., and some aromatic herbs. In some occasions the chicken is subjected to a larding with bacon, but this operation is more suitable for baked chicken. After the stuffing operation, the chicken is sewn or tied to avoid losing the stuffing. In commercial premises where rotisserie chicken is prepared for packing, it is usually chopped into pieces with poultry shears, usually in quarters.
Rotary or spiedo rotisseries allow a large number of chickens to be roasted at the same time. They are widely used at banquets, at outdoor parties with a large number of people and in chicken roasting stores. They usually work with a gas stove that emits heat by radiation to the different rotating rows («swords») of chickens already skewered and held by forks. The more «done» chickens are moved to the lower rows during roasting, while the raw chickens are placed in the upper rows and move down the roasting line as they roast.

El servicio fue exquisito, al igual que los platos (bueno, la ensalada no mereció la pena pedirla, ya que no está en muchos o en la mayoría de los restaurantes españoles de ese tipo).
Comimos…fabulosos gabanzos, queso, medio pollo a la brasa y un solomillo de ternera de 250g que estaba perfectamente asado por un asadero que sin duda sabe lo que hace. La calidad de la carne era excepcional.

Lleno de locales con familias numerosas y excelente servicio a pesar de la gran afluencia de gente que lo visita sobre todo el fin de semana. It is a homemade version, which you can order whole ($ 11,850 whole) or in combos like the 1/4 chicken ($ 6,750) that comes with thicker cut french fries and rice, plus a sauce of your choice, mustard and honey or pickles, for example.

El Pollo Sabroso is pure Venezuelan seasoning. In fact, behind it is Rakel Hurtado and her family, who you probably know from Papelón Sabroso, the temple of cachapas, arepas and pabellón in Providencia.
And that little Venezuelan flavor is an inherent part of this place, where the grilled chicken ($ 9,300 whole), has a special marinade, with a touch of slightly sweet panela on that addictive crispy skin.
